Collection: Maison Boissier

At the beginning of the 19th century, Bélissaire Boissier left his home to conquer Paris and become a confectioner. It was on a station platform, facing a train full of chestnuts, that he came up with the idea of covering them with sugar in order to stop the process of decomposition. This initiated the production of candied chestnuts.

It was in 1827 that he founded his first counter in Paris, a "Boissier" in front of which you could stop your horse-drawn carriage to stock up on sweets.
